A must in Palenque

In view of the remote place, in the middle of the jungle, it’s a delight to dine at Bajlum, with classical music & romantic lighting. The menu gives a good choice of local game & dish, with a choice of home made sauces. Cocktails are nice, but the wine choice is very limited. We went 3 nights in a row in order to taste all, and enjoyed the experience !

Unique and Delicious

Visited on Palindrome Day: 02022020. One of the most unique and delicious meals of our lives, and we have traveled to many parts of the world. I had Guajalote (wild turkey) with Hierbas de Selva salsa. This green salsa was a divine combination of fifteen jungle herbs. My wife had Conejo (rabbit) with Chiles Secos, a savory, not picante, salsa made from a mix of dried chiles. This is a family run place that focuses on pre-Columbian, ancient Mayan food from the jungle. Our waitress was fabulous, and spent a half an hour chatting with us about their cuilinary philosophy and how they had researched and sourced the food that goes into their recipes. Highest recommendation!

A culinary experience

Superb restaurant, inspired by ancient Mayan cuisine. All dishes delicious, prepared and served by the whole family.

Delicious and interesting

The review that says this restaurant serves up endangered species it talking rubbish. They offer quail, wild turkey, venison, boar, duck and fish. You can choose any of these and pair it up with your own choice of sauce, which include wild herbs, local tomatoes, peanuts and cacao. The venison and boar were both very tasty, The desserts are divine, both the chaya leaf flan and the sweet potato flan are delicious. We were staying at Chan Kah resort, and waked from there. It is a 15 minute walk on a safe pavement, but take a torch, it’s worth the walk.

Ask for vegetable plate !

I am vegetarian and the menu was mostly meat and fish - they were really accommodating and offered me a vegetable plate with 5 or 6 amazing “Mayan fusion “ vegetables . Kit was wonderful - so flavorful and different . Totally recommend- my husband was happy with a local quail dish

Delicious, traditional Mayan food

And how many other restaurants can you go to where the chef/owner personally comes to the table and explains the historical, cultural and religious significance of the food you’re about to eat????? I had the venison tenderloin with a sweet chocolate sauce, and yes,,,topped with roasted ants - cooked to medium rare perfection and better than any venison I’ve had in Indiana. Partner had quail in a creamy white sauce, again, cooked perfectly. Sides seem to be selected to balance the meat - mine was a mashed, herded "sweet potato", but was white, slightly sweet & creamy, not the starchy texture of US mashed potatoes or the overwhelmingly sweet orange version. Quail came with tart, slightly acidic greens - perfect pairing. Beautiful setting & atmosphere - every dish is individually prepared, might take a few minutes longer than a usual restaurant, so take the time to enjoy the surroundings,,,,and the drinks were incredibly refreshing and delicious :) I’m not quite sure what a previous reviewer considers "exotic" animals, but (coming from a white girl from the mid western US),,,, quail, rabbit, venison, even wild boar are not exactly exotic (OK, maybe the roasted ants, but they were delicious!).....When traveling - enjoy completely different foods from another part of the country, or the world...Restaurante Bajlum is one of the best
